Simple {and Refreshing} Cucumber Tomato Salad

This is a super easy salad recipe that is especially great for the summertime since it is most delicious and refreshing when eaten cold. It also requires very few ingredients and can be made as healthy as you want! I first discovered this awesome side dish a few months ago when a friend brought it with dinner after my youngest was born.  P.S. Meal Trains for moms after the birth of a new baby are pretty awesome!

I never thought I would say fresh vegetables smell so good when sliced but they do.

Honestly, I’ve never been a fan of raw vegetables besides salad coated in Ranch or Caesar dressing and I really didn’t think I would like this side dish as I had never tried anything like it before.  Once I tried it, I was amazed at how delicious and addicting it was, but maybe that’s because I love anything coated in Italian dressing.  Pretty soon, I was googling how to make this salad and discovered just how easy it was!

I’m sure this would be even more amazing with fresh cucumbers and tomatoes from a farmer’s market!

The only ingredients you need are cucumbers, tomatoes, and Italian dressing.  You can add other things like onion, parsley, avocado, and other veggies like that but the simplest version just includes these three ingredients.  I usually use two cucumbers and two tomatoes, but you can add as many or as little as you like of each vegetable.  I peeled and sliced the cucumbers and then chopped the tomatoes in about one-inch chunks and added them to a glass container (I prefer to use glass because it doesn’t leach out chemicals like plastic and is easier to clean). I don’t know about you, but cucumbers smell so delicious and refreshing to me when they are sliced!

I think everything tastes better with Italian dressing, but maybe it’s just me.

After I chopped the vegetables, I just poured some Italian dressing over them and mixed it so all the veggies were coated. Then I covered it and put it in the refrigerator until we were ready to eat dinner.

We had this simple Cucumber Tomato Salad with salmon and quinoa for an easy meatless Friday dinner.

I try to get veggies into every meal and this was a super affordable and easy way to do that for dinner tonight.  There is also plenty leftover to go with tomorrow’s lunch or dinner, or who am I kidding, maybe even breakfast, haha! Like I said above, you can make this as healthy as you like by using organic cucumbers and tomatoes, and maybe even by using homemade Italian dressing.  I have looked at a few recipes for homemade dressing but haven’t quite gone that far yet! I’m sure that would make it even more tasty!

Simple Cucumber Tomato Salad

2 cucumbers

2 tomatoes

1-2 cups Italian dressing

Peel and slice cucumbers into thin slices.

Chop tomatoes in one-inch pieces (or however big you like them).

Add cucumbers and tomatoes to glass dish or bowl.

Pour Italian dressing over and mix.

Chill and serve cold.
