Easy One-Pan Brown Sugar Garlic Pork with Vegetables

If you are like me, you probably love quick and simple weeknight dinners made with ingredients you usually have on hand.  I bought a 5 pound pork loin a month or so ago at Aldi for a little less than $10 and used half of it then for this same recipe. I froze the other half for future use so I decided to use it last night in the same recipe since its amazzzzinnng and since the ingredients for this recipe are staples in my kitchen.

This recipe is great since it doesn’t require any extravagant ingredients and you can put everything on one pan, making clean up so much easier! You can even stretch this even further by serving it with a salad and/or rolls, or another side.

Put the vegetables on the pan mixed with the oil and seasonings, then spread apart so there’s room for the pork loin.

I honestly never measure vegetables in pounds since I just cut some up until it looks like the pan is full. I only had 4 carrots so I made do with what I had. I think I used 5-6 potatoes but I would have used more if I had more carrots.

Place the pork loin in the center and cover with the garlic-brown sugar mixture.

The original recipe called for canola oil but I never use that and I used olive oil instead. I have made a version of this with honey before so it’s totally possible to cut out the processed sugar if you want to! I also ALWAYS add more garlic than what the recipe calls for because recipes never have enough garlic and garlic is so good for you! I think I added about 6 cloves.

I cooked mine for about 50 minutes or until it felt done since my thermometer was not working correctly.
It was so delicious and the pork was so tender and juicy.

The carrots turn out crispy and taste like candy. I would totally just sit there and eat all the crispy carrots out of the pan but I refrained haha.  I only spent $5 on the meat for this meal and it made enough for two meals so that’s basically 2.50 plus a dollar or two worth of veggies per meal.  I think $3-$4 for a meal for 2 adults and 2 kids is pretty good! And it’s not like it’s super unhealthy either, as long as you use honey instead of sugar (wink wink). We had it again tonight but I didn’t have enough of the carrots and potatoes (since I ate all the carrots haha jk) so I made a quick pan of roasted parmesan broccoli and zucchini to serve with it also.  It was so delicious and is so super easy! Winner winner, pork loin dinner!

BROWN SUGAR GARLIC PORK WITH CARROTS & POTATOES

Recipe adapted from Dinner Then Dessert.

INGREDIENTS

  • 2 lb pork loin
  • 4 garlic cloves, minced
  • 4 tablespoons brown sugar
  • 1 tablespoon olive oil
  • 2 lbs carrots peeled and sliced
  • 2 lbs potatoes scrubbed and cut into 1 inch chunks
  • 1/4 cup olive oil for vegetables
  • salt and pepper to taste

INSTRUCTIONS

  1. Preheat oven to 375 degrees.
  2. Mix 1/4 cup oil, salt and pepper with sliced carrots and potatoes.
  3. Mix 1 tbsp oil, brown sugar, garlic and rub all over pork loin.
  4. On one large cookie sheet, put down some foil or parchment paper and add the carrots and potatoes.
  5. Spread apart the vegetables to make an opening in the pan for the pork.
  6. Add the pork to the pan.
  7. Roast the pork and vegetables for 40-50 minutes, or until a meat thermometer registers at 150 degrees in the center of the roast.
  8. Let the pork rest for 5-10 minutes before cutting.
